An experience like no other

Thanks to its high polyphenol content, PROTIMOO Early Harvest olive oil keeps beautifully. But here’s the secret: it’s meant to be enjoyed immediately, while it’s at its most alive.

Straight from the mill, it’s a revelation. The color is a brilliant, cloudy green that catches the light. The aroma hits you first—freshly cut grass, vibrant green fruit, the essence of the grove itself. This is olive oil you don’t just use, you experience. Pour it, drink it, savor it in its purest form. It’s a once-a-year moment that deserves to be celebrated.

Catch the Freshness

What makes Protimoo Early Harvest Unfiltered special?

Early Harvest olive oil comes from the very first olives on the tree to mature each season. These olives are perfectly mature but not yet ripe—they’re still green rather than purple or black.

This timing makes all the difference. As olives ripen and change color, they gradually lose their potency. But when they’re harvested green, their flavor is at its most intense, and that intensity is directly connected to exceptional health benefits.

Feel the Potency

The peppery secret

Ever noticed that distinctive peppery finish in premium olive oil? That’s the taste of polyphenols—powerful antioxidants that make olive oil so good for you. The greener the olive, the higher the polyphenol count.

This is why Early Harvest olive oil stands apart. Made from green olives at their peak polyphenol levels, it’s among the healthiest extra virgin olive oils you can find anywhere in the world.
